SQUASH PICKLES | |
8 c. sliced squash 4 med. onions, chopped course 2 sweet peppers, chopped (red or green) 1 head cauliflower, torn in pieces 1/2 c. salt 3 c. sugar 3 c. vinegar 1 tsp. celery seed 1 tsp. mustard seed Mix squash, onions, pepper, cauliflower and salt. Cover with water and ice for 3 hours. Drain. mix remaining ingredients and bring to a boil. Add vegetables and boil for 3 minutes. Pour into jars and seal. Delicious with pinto beans. |
