CARIBBEAN SPINACH SALAD 
5 c. torn fresh spinach
3 c. torn Romaine lettuce
2 c. torn leaf lettuce
1 (20 oz.) can pineapple chunks in juice
1 (11 oz.) can mandarin oranges, drained
6 slices bacon, cooked and crumbled
1 sm. red onion, sliced in rings
Cooked salad dressing
1/2 c. sliced toasted almonds or chopped pecans

Place all ingredients except dressing and nuts in a large salad bowl. Toss with the hot cooked salad dressing. Sprinkle nuts on top. Add salt and pepper to taste. Serve immediately.

COOKED SALAD DRESSING:

1/3 c. sugar
1/3 c. cider vinegar
1/4 tsp. salt
1 tsp. celery seed
1/2 tsp. dry mustard
1 tsp. minced onion
1 egg, slightly beaten
1/3 c. vegetable oil
