CHEDDAR-SPINACH PIE 
2 c. shredded sharp Cheddar cheese
2 tbsp. flour
4 eggs, beaten
1 c. milk or 3/4 c. milk and 2 tbsp. brandy
1/2 tsp. salt
Dash of pepper
10 oz. pkg. frozen chopped spinach, cooked and drained

Heat oven to 350 degrees (or 375 degrees with pie shell). Toss cheese with flour. Combine eggs, milk and seasonings. Add cheese mixture and spinach; mix well. Pour into greased 9-inch pie plate (or on pie shell). Bake 40 minutes. Serves 8.
