LOBSTER NEWBURG | |
2 c. boiled, diced lobster meat 1 c. cream 2 egg yolks, beaten 1 tbsp. flour 1/4 tsp. salt 4 tbsp. butter, melted 1 tsp. lemon juice Paprika Heat the lobster in 3 tablespoons melted butter, using care that the butter does not brown. In another saucepan, stir the flour well into the other tablespoon of butter, then add the cream; heat and stir until it is smooth. When boiling starts, remove from the heat. Add the beaten egg yolks and stir until the mixture thickens. Add the diced lobster and seasoning, but do not heat again or it may curdle. Serve with toasted crackers or thin, dry toast. Serves 6. |
