PANNAKOEKENS WITH APPLE-CINNAMON SAUCE | |
Serves 4. Important: Oven MUST be preheated to 425 degrees. Melt in 4 (8-inch) non-stick oven-safe saucepans. (I do this in the oven while it is preheating.) 2 c. flour 8 eggs Whisk together. Pour batter (divided evenly) into saucepans. Bake in hot oven about 20 minutes. These are "dumped" upside down onto a plate to serve. Serve immediately with sauce or syrup. Sauce can be made while pancakes are cooking. APPLE-CINNAMON SAUCE: 2 apples, cut into thin slices (peeling is optional) Cook with 2 cups water; simmer until soft. Mix separately: 1 tbsp. cornstarch 2 tsp. cinnamon 1/8 tsp. cloves Pour over cooking apples. Stir well; continue to stir until thickened. Reduce heat to keep warm until pannakoekens are done. |
