JAM DANDY MUFFINS 
1 2/3 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/8 tsp. cinnamon
1/3 c. shortening
3/4 c. milk
1 egg
Your favorite jam or marmalade

In mixing bowl combine flour, sugar, baking powder, salt and cinnamon. Cut in shortening until particles are fine. Add milk and egg; mix until thoroughly blended. Spoon into muffin cups. Place 1 teaspoon jam on top of each muffin, pressing into batter slightly. Bake at 400 degrees for 20-25 minutes. Makes 15-18.
