CHEESY POTATO CASSEROLE 
4 c. potatoes, peeled, cubed
1 c. cream-style cottage cheese
1 c. commercial sour cream
1/2 c. green onions, chopped
1 tbsp. fresh parsley, chopped
1 clove garlic, minced
1/2 tsp. salt
1/2 c. (2 oz.) shredded Cheddar cheese
Paprika
1 green onion with top (optional)

Cook potatoes in boiling salted water 15 to 20 minutes or until tender; then drain well. Combine next 6 ingredients in a large bowl; mix well. Stir in potatoes. Spoon mixture into a lightly greased 1 1/2 quart casserole; bake at 350 degrees for 25 minutes. Top with cheese; sprinkle lightly with paprika. Bake an additional 5 minutes or until cheese melts. Garnish with green onion, if desired. Yield: 6 servings.
