ZUCCHINI SOUP 
4 slices bacon, coarsely chopped (or ham)
1 lg. onion
A good bit of garlic
3 zucchini, sliced (lg. ones that are too lg. to saute are good for this)
1 env. of beef or chicken
Salt, pepper, parsley, basil
Morton's Nature's Seasoning (or thyme, basil and oregano)
Parmesan cheese

Cook and stir bacon until light brown, drain off all but 1 tablespoon of fat. Cook onion and garlic until tender. Stir in remaining ingredients, except cheese. Heat to boiling then reduce heat and simmer until tender. Place soup 2 cups at a time in blender on high speed until pureed. Serve with Parmesan cheese on top.
