CRISPY HERBED CHICKEN 
1/2 c. cornmeal
1/4 c. flour
2 tbsp. grated Parmesan cheese
1/2 c. skim milk
1 1/2 tsp. Italian seasoning
1/4 tsp. garlic powder
1/4 tsp. pepper
1 chicken, cut up and skinned
3 tbsp. butter, melted

Heat oven 400 degrees. Combine dry ingredients. Dip chicken into milk, coat with cornmeal mixture. Place chicken on rack in 15x10 inch pan. Brush with butter. Bake 40 to 45 minutes or until golden brown and tender. Makes 5 servings.
