CRUNCHY SWISS AND HAM APPETIZERS 
2 c. very stiff mashed potatoes
2 c. finely chopped ham, cooked
1 c. (4 oz.) shredded Swiss cheese
1/3 c. mayonnaise
1/4 c. minced onion
1 egg, well beaten
1 tsp. prepared mustard
1/2 tsp. salt
1/4 tsp. pepper
3 1/2 c. corn flakes, crushed

Combine all ingredients except cornflakes. Chill. Shape in 1 inch balls and roll in corn flakes. Place on greased cookie sheet and bake at 350 degrees for 25-30 minutes. Serve hot. Makes about 8 dozen.

I prepared these today as an appetizer for my meal. I was worried they weren't going to solidify enough during the baking process. After 30 minutes they were still a little soft, so I adjusted the temperature to 375°F and cooked them for an additional 10 minutes. With these slight adjustments they turned out crispy, and stayed together well. They made for great finger food with the consistency and rich creamy flavor.
