IMPOSSIBLE VEGETABLE PIE 
2 c. fresh broccoli or cauliflower
1/2 c. chopped onion
1/2 c. chopped green pepper, if desired
1 c. shredded Cheddar cheese
1 1/2 c. milk
3/4 c. Bisquick
3 eggs
1 tsp. salt
1/4 tsp. pepper

Lightly grease pie plate. Cook vegetables until almost tender, about 5 minutes. Drain well. Mix with onion, pepper and cheese in pie plate. Beat remaining ingredients until smooth, 15 seconds in blender. Pour into pie plate. Bake at 400 degrees for 35-40 minutes or until golden brown and knife inserted half way between center and edge comes out clean. Let stand 5 minutes before cutting.

Note: 1 package (10 ounce) frozen broccoli or cauliflower can be used. Thaw and drain, but do not cook.
