PINEAPPLE CAKE | |
2 c. flour 1 1/3 c. sugar 2 eggs 2 tbsp. baking soda 1 lg. can crushed pineapple 1 c. walnuts, chopped 1/2 c. yellow raisins (optional) (soak in warm water while preparing the rest of the recipe, then drain) Pour into greased 9 x 13 inch pan. Bake at 350 degrees 18 to 24 minutes. Cool completely. FROSTING: 1 stick butter 1 tbsp. vanilla 1 (8 oz.) pkg. cream cheese (at room temperature) (whipped works best) 1 1/2 c. confectioners sugar Refrigerate cake. |
