LEMON CHICKEN 
2 chicken breasts; halved
1/4 c. oil
Juice of one lemon
1 tsp. soy sauce
1/4 c. chopped scallions, optional

Mix oil, lemon juice and soy sauce and marinate the chicken in it in the refrigerator overnight. Brush chicken with the extra marinade, sprinkle with scallions, put it on the lowest shelf of the broiler and cook until tender (8 to 10 minutes on each side). Garnish with lemon slices. Serve hot or cold. Great for picnics!
