BURRITOS 
1/4 c. onion
2 c. shredded, cooked pork or ground beef
1 tbsp. bacon fat or shortening
1 (8 oz.) can chopped tomatoes
1 c. chopped green chilies
1 clove garlic, minced
12 white flour tortillas
1 c. grated Cheddar cheese

Saute the onion with the pork in the hot bacon fat until the onion is transparent. Make a sauce with the tomatoes, green chilies, and garlic; heat for 10 minutes. Divide the meat mixture among the tortillas and wrap the tortillas. Place them in a baking pan. Pour some chili sauce over them and sprinkle with cheese. Bake at 350 degrees until the cheese melts.
