DELIA'S FRUIT CAKE 
3 eggs
2 c. sugar
1 lb. pork fat, ground
1 c. molasses or preferred syrup
Salt
1 c. hot water
1 1/2 tsp. baking soda
1 tsp. allspice
1 tsp. cinnamon
1 tsp. cloves
2 c. candied fruit
1 pkg. currants
1 pkg. raisins
Nut meats
Maraschino cherries
Flour for fruit
Flour to stiffen dough

Flour fruit. Cream fat and sugar. Add eggs, beat well. Add molasses and salt. Add soda to water while holding over bowl with first mixture. Pour in remaining water. Stir. Add spices and flour to make a fairly stiff dough. Add fruits and nuts. Add enough flour to hold up the fruit. Pour into well greased, floured pans. Bake at 325 degrees for 1 hour or until done. Makes 2 cakes.
