CARIBBEAN CUCUMBER SALAD 
2 med. cucumbers
1 tsp. salt
1 lg. clove garlic, crushed
1 or 2 jalapeno peppers, seeded and chopped fine
Juice of 1 fresh lime

Peel cucumbers and cut in halves lengthwise. Use teaspoon to scoop out the seeds. Chop cucumbers coarsely and put in colander. Sprinkle the salt over them and toss lightly. Let sit 10 minutes, then turn them into a paper towel and pat dry to remove excess moisture. Put chopped cucumber in small bowl.

Add garlic and jalapeno pepper. Toss lightly, then add lime juice. Refrigerate covered until ready to serve. Serves 4.
