LEMON GARLIC POTATOES 
1 Tbsp. olive oil
1 lb. small new potatoes, sliced in 1/8 inch pieces
3 large cloves garlic, minced
1 cup water
Juice of 1 lemon
6-8 ozs. fresh spinach
Salt and pepper to taste

Saute potatoes in olive oil approximately 5 minutes. Stir in minced garlic, add water. Cover and simmer 5 minutes until tender. Add lemon juice over potatoes. Add spinach and stir until wilted; add salt and pepper to taste. Serve hot.
