LEMON-BUTTERED NEW POTATOES 
2 lbs. sm. new potatoes, unpeeled and quartered
1/4 c. butter
2 tbsp. chopped fresh parsley
2 tbsp. lemon juice
1 tsp. grated lemon rind
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. ground nutmeg (optional)
Fresh parsley sprigs

Cook potatoes in boiling water to cover for 10 minutes or until tender. Drain carefully, leaving skins intact. In a small saucepan, combine butter and next 6 ingredients. Cook over medium heat until butter melts. Pour over potatoes. Garnish with fresh parsley. Serve immediately. Yield: 8 servings.
