COCONUT PECAN SQUARE COOKIES 
1/2 c. butter, softened
1/2 c. packed dark brown sugar
1 c. all-purpose flour
1/2 c. shredded coconut
2 tbsp. all-purpose flour
2 eggs, beaten
1 c. packed light brown sugar
1 c. chopped pecans
1 tsp. vanilla
1/8 tsp. salt
confectioners sugar

Preheat the oven to 350°F. Mix the butter, 1/2 cup brown sugar and 1 cup flour in a bowl until crumbly. Press into an 8 x 8-inch baking pan.

Bake for 20 minutes.

Toss the coconut with 2 tablespoons flour. Combine the coconut, eggs, 1 cup brown sugar, pecans, vanilla and salt in a bowl and mix well. Pour over the crust, spreading the batter evenly in the pan.

Bake for 20 minutes. Let cool. Cut into squares. Roll each square in confectioners sugar.

Yield: 2 dozen.
