SPINACH BLUE CHEESE SALAD 
1/2 lb. fresh spinach
1 red bell pepper
1 yellow bell pepper
1/2 c. fresh mushrooms
2 tbsp. balsamic vinegar
1/2 tsp. salt
1/4 tsp. pepper
6 tbsp. extra virgin olive oil
1/4 c. crumbled blue cheese

Wash spinach and tear leaves into pieces. Cut peppers into strips and slice mushrooms. Add to the spinach. Crumble blue cheese over salad. Combine vinegar, salt, pepper and oil in a jar and shake. Just before serving add oil mixture to salad and toss.
