PUMPKIN BREAD (JOSEPH'S FAVORITE!) | |
Delicious but tastes better after it sits for 1 day!! 1 1/2 cups oil 1 cup sugar 1 cup dark brown sugar 4 beaten eggs 1 (15 oz.) can pumpkin 3 cups all-purpose flour 1 tsp. cinnamon 1 tsp. nutmeg 1/8 tsp. ground cloves 2 tsp. baking soda 1 1/2 tsp. salt 1 cup chopped walnuts (optional) Preheat oven to 350°F. Grease and flour two 8-inch loaf pans Beat oil and sugars. Stir in eggs and pumpkin. Beat well. Combine dry ingredients. Beat into pumpkin mixture. Stir in nuts. Pour into greased and floured loaf pans. Bake at 350°F for 50 to 60 minutes or until toothpick comes out clean. Cool 10 minutes and remove from pans. Cool completely and wrap in tin foil.
