BROCCOLI - CHEESE SOUP 
1 c. celery, chopped
1 c. carrots, chopped
1 c. onion, diced
2 c. potatoes, diced
4 c. water
1 (10 oz.) pkg. chopped broccoli
1 (10 oz.) pkg. frozen cauliflower, cut up
2 cans cream of chicken soup
1 lb. Velveeta cheese

Combine first 5 ingredients and cook for 15 minutes. Add broccoli and cauliflower and cook 15 minutes longer. Add soup and cheese and cook until heated and cheese is melted. Can be frozen when cool.

Very good recipe. Not being a Velveeta fan, I substituted two 10 oz cans of cheddar cheese soup. Much easier and it combines well with the other ingredients. One might also consider mushroom or celery soup in place of the cream of chicken.
