ONE DISH SUPPER | |
1 lb. ground beef or lamb 4 tbsp. oil 2 tbsp. butter 1 sm. eggplant, cut in sm. cubes 1 clove garlic, chopped 3 lg. ripe tomatoes (2 c.) 1 tsp. salt Pepper, thyme, oregano to taste 3 onions, chopped 2 c. cooked macaroni or rice In large skillet, cook ground meat, stirring until browned. Drain fat; set meat aside. Heat oil and butter in same skillet; add cubed eggplant, onions and garlic. Stir to brown. Return meat to pan; add remaining ingredients. Cook, stirring, about 10 minutes. Garnish with greens. Makes 4 servings. |
