PANCAKES 
1 1/2 c. all purpose flour
2 tsp. baking powder
Dash salt
1 tbsp. granulated sugar
2 eggs
1 1/2 c. milk
3 tbsp. melted butter

In a bowl, sift together flour, baking powder, salt and sugar. Beat eggs, milk and butter together. Add to flour mixture. Stir until blended.

Heat a griddle over medium high heat. Grease lightly. Pour about 1/4 cup batter onto griddle. Bake until center is filled with unbroken bubbles. Turn with a spatula. Bake on other side. Serve immediately. For thinner pancakes, add more milk to the batter. For thicker pancakes, add more flour. to check if griddle is ready, sprinkle a few drops of cold water on it. The water will pop before evaporating.
