BANANA FRITTERS 
2 1/2 c. cooking oil
1 c. flour (wheat or rice)
1 1/2 tbsp. sugar
3 tbsp. milk
1 egg, beaten
3 bananas
2 tsp. baking powder
1/4 tsp. salt
1 tsp. lemon juice
Confectioners' sugar

Heat oil. Mash bananas. Combine flour, baking powder, sugar, and salt; add to bananas alternating with milk. Stir in lemon juice. Add beaten egg. Drop by teaspoonful into deep hot fat and fry until golden brown; drain. Sprinkle or roll in confectioners' sugar. Keep small, if using rice flour.
