NANCY'S HOOD RIVER ROMAINE | |
1/4 c. salad oil 3 tbsp. catsup 2 tbsp. red wine vinegar 1 tbsp. soy sauce 1 tbsp. sugar 1/2 c. sliced almonds 6 slices bacon 1 lg. head romaine 1 med. avocado 1/2 c. golden raisins 1 c. sliced mushrooms Salt and pepper In small jar or bowl combine oil, catsup, vinegar, soy sauce, and sugar; shake or stir until sugar is dissolved, then set aside. Spread nuts on shallow pan and toast in oven then set aside. Cook bacon until crisp, drain well and crumble; set aside. Rinse and pat dry romaine then break into bite size pieces. Cover and chill until ready to serve. Just before serving, peel and pit avocado and slice thinly. In salad bowl, combine romaine, mushrooms, avocado, raisins, almonds. and bacon. Add dressing, season with salt and pepper. Mix well. |
