LEMON CHEESECAKE BARS 
1 pkg. lemon cake mix
1 (8 oz.) pkg. cream cheese, softened
1 c. powdered sugar
2 tbsp. lemon juice
1/3 c. butter
1 egg
2 tsp. grated lemon peel
2 eggs

Blend dry cake mix, butter and 1 egg; press into ungreased 9 x 13 inch pan. Cream cheese until smooth and gradually blend in powdered sugar; add lemon peel and juice and stir until smooth. Reserve 1/2 cup of this mixture.

Beat 2 eggs into remaining cheese mixture until well blended and spread over cake mixture. Bake at 350 degrees until set, about 25 minutes. Cool completely and spread with reserved cheese mixture, refrigerate until firm and cut into 2 x 1 inch bars. Makes 48 bars. Store in the refrigerator.
