LEMON CHEESECAKE BARS | |
1 pkg. lemon flavored cake mix (not pudding) 1/2 c. butter (low cholesterol can be used) 3 eggs or egg substitute 2 (8 oz.) pkg. light cream cheese 1/2 c. sugar 1/2 tsp. vanilla 2 tsp. lemon juice Confectioners' sugar Heat oven to 350 degrees. Spray pan with Baker's Joy (13 x 9 inch). Mix cake mix, butter and eggs in a large bowl with electric mixer until crumbly. Press in bottom of prepared pan. Bake for 8 minutes; remove from oven. Mix cream cheese, sugar, vanilla and lemon juice with electric mixer until smooth and fluffy. Add eggs. Pour into hot crust. Bake for 25 minutes. Dust with confectioners' sugar. Cool and cut into bars. Makes 48 bars. Keep in refrigerator. |
