BAKED FISH | |
3 to 5 lb. stripped bass or fresh water bass 1/2 stick butter Salt Pepper Flour 1 c. diced onions 2 c. sliced white potatoes 6 to 8 slices bacon Dash cayenne pepper Sprinkle cleaned fish with salt, pepper, parsley flakes and dredge in flour. (Head can be left on or removed as desired.) Place fish in a deep roasting pan, sliced potatoes and onions around sides. Put strips of bacon on top of fish along with butter. Add 1 cup of water, cover and bake in a 325 degree oven for 1 hour. Remove cover and pour 1/2 cup ketchup over fish. Leaving cover off, return to oven and place under broiler until bacon is crisp. Remove from oven and serve. |
