AMERICAN POTATO SALAD 
2 lbs. potatoes
2 hard-cooked eggs, diced
1 c. diced celery
1 sm. onion, grated
2 tbsp. chopped parsley
1 c. mayonnaise
1 tbsp. mustard
1 tsp. lemon juice
Salt and pepper to taste

Place potatoes in saucepan and cover with water. Bring to boil, then simmer until tender. When cool, peel potatoes. Cut into thick slices. Place potatoes, egg, celery, onion and parsley in bowl.

In another bowl, using fork or whisk, combine mayonnaise, mustard, lemon juice, salt and pepper. Pour over potatoes and toss lightly. Makes 6 servings.
