CARROT CAKE | |
2 c. grated carrots, firmly packed 1 1/2 c. Crisco oil 2 c. sugar 3 c. sifted cake flour 4 eggs 2 tsp. salt 2 tsp. cinnamon 2 tsp. baking powder 2 tsp. baking soda 1 c. chopped nuts Mix ingredients in order of list. Mix well. Bake in a 325 degree oven for about 1 hour or until toothpick comes out clean. Use a tube or bundt pan. Let cool and ice with a cream cheese frosting. CREAM CHEESE FROSTING: 1 (3 oz.) pkg. cream cheese 1 lb. box confectioners' sugar 1 tsp. vanilla Cream the cream cheese and add sifted confectioners' sugar a little at a time until desired amount and consistency. Add a little milk if you need it. |
