ORANGE BRAN MUFFINS | |
1 can (11 oz.) mandarin orange segments, drained 1 1/2 c. All-Bran cereal 1/2 c. boiling water 1/3 c. milk 1/4 c. frozen orange juice concentrate, thawed 1 egg 3 tbsp. vegetable oil 1 c. all-purpose flour 3 tbsp. sugar 1 tsp. baking soda Preheat oven to 400 degrees. Place paper liners in 12 muffin-pan cups or grease the cups. Cut up orange segments and place in strainer. In large bowl, mix cereal and boiling water. Stir in milk, orange juice concentrate, egg and oil until thoroughly blended. Set aside. In a medium bowl, stir together flour, sugar and baking soda. Add to cereal mixture and stir just until moistened. Gently stir in orange pieces just until blended. Fill muffin cups 2/3 full. Bake for 18 to 20 minutes or until wooden pick inserted in center comes out clean. Remove from pan and cool on wire racks or serve warm. Store wrapped in foil in a cool place. May reheat in 400 degree preheated oven for 8 to 10 minutes. |
