ORANGE BRAN MUFFINS 
1/2 c. raisins
1/2 c. chopped dried apple slices
1/2 c. fresh orange juice
1 c. flour
1 tbsp. baking powder
2 tsp. baking soda
Pinch of salt
3/4 c. sugar
1/2 tsp. cinnamon
3/4 c. Bran Flake cereal
1 egg
1/2 c. milk
1/3 c. vegetable oil

In small bowl, combine raisins, dried apples and orange juice (soak for 30 minutes). Preheat oven to 350 degrees. Line two 8 cup muffin tins with paper liners. In a large bowl, sift together flour, baking powder, baking soda, salt, sugar and cinnamon. Add the bran cereal and mix thoroughly. In another bowl, beat together the egg, milk and oil. Make a well in center of dry ingredients and pour the egg mixture into it. Add the raisins, apples and orange juice and stir just until all the ingredients are incorporated, Do Not overmix.

Fill each cup about 3/4 full with the batter and bake until the muffins are well colored and a toothpick inserted in the center comes out clean, 18 to 20 minutes. Transfer to a rack and allow them to cool.
