HAM SOMES 
DOUGH:

2 c. all-purpose flour
3 1/2 tsp. baking powder
1/2 tsp. salt
2 tsp. sugar
1/2 c. shortening
2 tsp. caraway seed
1 egg and enough milk to measure 2/3 c. liquid

Sift dry ingredients into mixing bowl. Cut in shortening. Stir in caraway seed and egg and milk. Stir until dough forms a ball. Knead on floured surface, about 10 strokes. Roll out into a 12x10-inch rectangle.

HAM FILLING:

2 1/2 c. ground ham
1 med. onion, ground
2 tbsp. chopped parsley
1 tbsp. prepared horseradish
2 tsp. prepared mustard
1/2 tsp. cayenne pepper
1 egg, well beaten

Mix all ingredients. Spread filling gently over dough. Roll as a jelly roll. Cut into 3/4-inch slices. Place, cut side down, on ungreased baking sheet 1-inch apart. Bake at 425°F for 20 to 25 minutes until light brown. Serve hot with Cheese Sauce.

CHEESE SAUCE:

3 tbsp. butter
3 tbsp. all-purpose flour
2 c. milk
1 c. shredded sharp cheese
2 tsp. Worcestershire sauce
Salt to taste

Melt butter in saucepan over low heat. Blend in flour. Gradually add milk, stirring constantly, until thick. Add cheese, Worcestershire sauce, and salt to taste. Continue cooking until cheese melts.

My Mother made these for decades She couldn't remember where she got the recipe. They are mouth watering. Those old fashioned farm girls knew how to cook. Unfortunately women like that are a dying breed.This recipe isn't your run of the mill country fare. Back in culinary school I made these for the chef instructors & they were blown away!
