16 oz. cream cheese
1/2 c. sugar
2 eggs
1 tsp. vanilla
1 tsp. lemon juice
12 vanilla wafers
Cherry fruit pie filling, optional
Semi sweet chocolate shavings, optional

Preheat oven to 350 degrees. Place 12 cupcake size foil muffin liners inside cupcake tins. Put 1 vanilla wafer in the bottom of each liner. Mix together cream cheese, vanilla, sugar and lemon juice. Add eggs and beat until smooth. Pour mixture over wafers until 3/4 filled. Bake 20 minutes. Chill cakes and top with fruit filling or chocolate shavings.
