APPLESAUCE BRAN MUFFINS 
3 c. All Bran cereal
2 c. skim milk
1 c. unsweetened applesauce
2 eggs or 1/2 c. liquid egg substitute
1/3 c. vegetable oil
2 1/2 c. flour
4 tsp. baking powder
1/4 tsp. salt
3/4 c. brown sugar
1 tbsp. cinnamon
1 tsp. grated lemon peel

TOPPING:

1/4 c. brown sugar
2 tbsp. butter

Preheat oven to 375 degrees F. In large mixing bowl, combine cereal, milk, and applesauce and allow to sit 10 minutes. Beat in eggs and oil. In separate bowl, stir together all remaining dry ingredients. Fold dry ingredients into cereal mixture, just until moistened. Spoon into 24 muffin tins sprayed with nonstick cooking spray. Combine butter and sugar for topping and sprinkle on top of muffins. Bake at 375 degrees F. for 15 to 18 minutes.
