CANNED OKRA OR SQUASH 
1 gal. cut up Okra, sliced as for frying
4 oz. vinegar
2 oz. salt

Put all ingredients in an open cooking with enough water to cover. Bring to boil, boil 5 minutes. Place in hot sterilized jars and seal. When opening to use drain off liquid and rinse with tap water. No salt is needed. Batter and fry as you would fresh Okra.

Yield 8 pints.
