1/2 c. butter
1 c. sugar
1 tsp. coconut extract
1 egg
1 pkg. Bixmix
1 pkg. Spudflakes

Cream together butter, sugar, coconut extract. Add egg and beat. Stir in Bixmix and Spudflakes. Cover bowl and chill for about 1 hour. Heat oven to 375 degrees. Shape dough in marble sized balls and place 2 inches apart on ungreased cookie sheet. Bake 12 to 14 minutes. Makes about 4 dozen.
