COCO LOCO 
2 eggs, room temperature
1/4 c. milk, room temperature
3 tbsp. carob powder
Pinch of salt
1/4 tsp. vanilla
1 1/4 c. milk
1 tbsp. brown sugar

In a bowl, beat the eggs until foamy. Beat in the 1/4 cup milk and vanilla. Beat in the carob powder and salt. In a small saucepan, combine the 1 1/4 cup milk and the sugar. Stir over medium heat just to boiling point. Remove from heat and add into the egg mixture with an egg beater. Pour into 2 cups. If you like, sprinkle a little coconut over each cup. Serves 2.
