QUESADILLAS | |
1 1/2 c. masa harina 3/4 c. water (more if necessary) 1 well beaten egg Small can green chilies, cut in strips 4 oz. cheese, cut in strips Mix masa harina and water and egg. Knead to form 12 dough balls. Place in large bowl, cover to keep moist. Using rolling pin, flatten out dough balls to form circles. Place dough over waxed paper to keep from sticking. Then place cheese strips and chili strips at center or circle. Fold dough over to form a half circle. Press edges with fork to seal. Using fork, make small indentations over top of quesadillas. Then fry in a deep skillet until golden brown. Be sure to fry both sides of quesadillas. Garnish with hot salsa. (Makes 12, serve two per plate). |
