PARKER HOUSE ROLLS | |
1 c. milk, scalded 1/2 c. sugar 2 tbsp. butter 2 tsp. salt 2 pkg. dry yeast 2 eggs 3 1/2 c. flour Heat milk to boiling point, add sugar, butter, eggs and salt. dissolve yeast in 1/2 cup warm water, add to milk mixture. Stir in 2 cups flour. Beat vigorously with wooden spoon. Add remaining 1 1/2 cup flour. Turn onto lightly floured board and knead until smooth and elastic. Place in large greased bowl and let raise until double in bulk. Divide dough into two portions. Roll on lightly floured board to 2 inches thickness. Cut with round cutter. Place butter on half of round. Fold over into half round and pinch edges together. Place in greased pan. Let raise until even with top of pan. Bake at 350 degrees for 25 minutes. Take from oven and brush with melted butter. |
