NO-BAKE PUMPKIN PIE 
1 pkg. dessert topping mix
1 1/4 c. milk
1/2 tsp. vanilla
1 pkg. instant vanilla pudding mix
1 c. cooked mashed pumpkin or canned pumpkin
1 tsp. cinnamon
1/2 tsp. ginger
1 baked 8-inch pastry shell or crumb crust

Prepare dessert topping mix with 1/2 cup milk and vanilla. Combine pudding mix, 3/4 cup milk, pumpkin and spices. Add to dessert topping. Beat slowly with electric mixer until well mixed. Pour into pastry shell. Chill for 3 hours. Garnish with additional dessert topping.
