HUCKLEBERRY COBBLER 
1/3 c. flour
1 1/2 c. sugar
3/4 tsp. cinnamon
Grated peel of one lemon

Toss mixture with:

8 c. fresh huckleberries

Place in prepared pan. Butter a 9 x 13 inch baking pan, preheat oven to 350 degrees.

TOPPING:

1 c. sugar
2 3/4 c. flour
2 1/2 tsp. baking powder

1/2 c. shortening

Mixture should resemble fine meal.

2 eggs

Stir and add to pastry mixture until crumbly. Sprinkle this mixture over huckleberries. Melt 1/3 cup of butter and drizzle over topping. Bake for 35-45 minutes.

I did this recipe but I didn't have the 8 cups required. I used 4 cups...and it was FABULOUS. The sweet taste of huckleberries and the perfect taste of the crust was to die for. Even my grandkids said it was the best cobbler they've ever had.
