MYRTLE'S EASY BROCCOLI MUFFINS 
1 (10 oz.) box chopped broccoli, thawed and dried (Bird's Eye is best)
1 medium size onion, chopped
3 eggs, beaten
1/2 cup (1 stick) butter, melted
6 oz. cottage cheese (regular or non-fat)
1 tsp. salt
1 (8 oz.) box Jiffy corn muffin mix

Mix first 6 ingredients, then add Jiffy Mix and mix well. Fill greased muffin pans about 2/3 full.

bake at 375°F for 25 minutes or until done and brown on the top.

Makes 12 to 15 muffins.
