APPLE CIDER MUFFINS 
2 c. all-purpose flour
1 tbsp. baking powder
1/4 tsp. salt
2/3 c. raisins
1 c. apple cider
6 tbsp. butter, melted
1 egg
1/4 c. sugar
1 1/2 tsp. cinnamon

Preheat oven to 400 degrees. Sift together flour, baking powder and salt, add raisins, toss until evenly coated. Combine apple cider, butter and lightly beaten egg. Pour cider mixture over flour mixture. Stir until blended (will be lumpy). Spoon into greased muffin cups. Combine sugar with cinnamon, sprinkle on top. Bake 20 to 25 minutes. Makes 6-12 muffins.
