ZUCCHINI CAKE 
3 c. flour
1/2 tsp. salt
1 1/2 c. oil
1 sm. can crushed pineapple and juice
2 c. zucchini, shredded
2 c. sugar
1 tsp. baking soda
3 eggs, beaten
1/2 c. coconut
1 c. chopped walnuts

Mix flour, sugar, soda and salt. Add oil, pineapple and juice and eggs. Stir in coconut, zucchini and walnuts. Bake in a greased pan at 350 degrees for 1 hour.
