JAMBALAYA 
2 1/2 lbs. broiler fryer chicken
3 tsp. salt
1/4 tsp. pepper
8 pork link sausage
2 cans stewed tomatoes (16 oz.)
1 lg. clove garlic, crushed
1/4 tsp. thyme
1/8 to 1/4 tsp. cayenne red pepper
1 c. uncooked reg. rice

Place chicken in Dutch oven. Add enough water to cover chicken. Sprinkle with salt and pepper. Heat to boiling, reduce heat, cover and simmer 45 minutes. Remove chicken from broth. Strain broth, reserve 2 cups.
