CHICKEN PIE | |
1 chicken, cooked until tender in water 1/2 c. lard + 1 tbsp. 3 c. flour 1 1/2 tsp. baking powder 1 tsp. salt 4 tbsp. water (may need bit more) 1 can English peas (divided) 1 can carrots (divided) Remove bones from chicken. Put half of chicken meat into 13 x 9 x 2 pan. Add half of peas and carrots. Make pastry of remaining ingredients (flour, salt, baking powder, lard and water). Roll out and cut into strips. Put half of strips over mix. Repeat with meat, carrots, peas and remainder of strips. Put in enough chicken broth to be even with pastry but not cover top pastry. Dot with butter. Cook in oven at 350 degrees until brown, about 30 minutes. This can be cut in half. |
