CAROL'S CALIFORNIA SPINACH SALAD 
1 bunch spinach
1/2 c. sugar
1/3 c. slivered almonds
2 oranges, cut up
1/2 c. sliced celery
4 green onions, sliced
1 pkg. bean sprouts

Wash, dry and refrigerate spinach. Heat sugar in small fry pan over medium heat until sugar melts; add almonds and heat, stirring constantly until almonds become caramelized. Cool.

Tear spinach into bite-size pieces and add remaining ingredients. Prepare the dressing below and serve immediately.

DRESSING:

1 1/2 tsp. salt (optional)
2 tbsp. sugar
2 tbsp. vinegar
1/4 c. oil
Dash Tabasco
Dash pepper
