ONION - CHEESE MUFFINS 
3/4 c. finely chopped sweet Spanish onion
2 1/4 c. flour
1/2 tsp. salt
1 c. grated Cheddar cheese
1 c. milk
3 tbsp. melted butter
2 tbsp. sugar
4 tsp. baking powder
1 egg

Combine onion, flour, sugar, salt, baking powder and cheese. Mix together milk, egg and butter. Pour into dry ingredients. Mix just until blended. Spoon into greased muffin cups. Bake at 400 degrees for 15 minutes or until golden. Yield: Makes 14-16 muffins.

Note: These are just heavenly with blackeyed peas on New Years Day or homemade vegetable beef soup!
